Step 1
Place a large pot or Dutch oven on a stove over medium heat, then add the bacon, and cook them until nice and crispy. Remove the bacon from the pot, then put them on a plate lined with paper towel to drain off all the excess oil, and set them aside. Back in your pot, remove the excess bacon grease and leave only about 2 tablespoons, then add the butter, and let it melt into the bacon grease. Add the diced onion, red pepper, and jalapeno, then give them a good stir, and cook them for about 5 minutes or until softened.

Step 2
Now, add the garlirc, then stir them together, and let them cook for about 30 seconds or until fragrant. Sprinkle the flour all over the vegetables, then give them a good mix to incorporate, and cook for 30 seconds or more until the flour is lightly toasted. Pour the broth gradually while stirring consistenly to combine, then add the water, milk, cream, potatoes, chicken breast, and corn, and then give them a good mix.
Step 3
Next, season the mixture with salt, pepper, smoked paprika, and ground mustard, then give them a good stir, and let it boil until the chicken is cooked through and the potatoes are fork tender. After cooking the chicken, remove it from the pot, then shred or dice it into small pieces, and set side while covered with aluminum foil to keep it warm. Grab an immersion blender and puree about half of the soup, then put the chicken back into the pot, and stir in the bacon as well. Taste and adjust the flavor as needed, then garnish with your favorite topping, serve, and enjoy!
