In a medium-sized mixing bowl, add the bread, grated onion, and beaten egg, then mash them with a fork until the bread absorbs the moisture, and stir in the sun-dried tomatoes, basil, parmesan, garlic, salt, and pepper. Add in the beef, then use your hand to combine all of the ingredients. Using a spoon, scoop out equal chunks of meat, then place them on a chopping board, and roll each scoop into meatballs. Place a non-stick pan on a stove over medium-high heat, then drizzle some olive oil, and let it heat up before placing the meatballs. Gently turn the meatballs frequently until lightly charred with a good crust on them. Don’t worry if they’re not cooked through yet because they’ll continue cooking in the sauce later, remove them from the pan and leave the rendered fat behind.

Lower your heat to medium, then fry the onion until it begins to soften or turn golden, and add the garlic frying them for 1 to 2 more minutes. Now, add the tomato paste and continue frying for 2 more minutes before pouring the red wine. Deglaze the pan and simmer down the wine for about 3 to 5 minutes or until it turns into a thick consistency. Pour in the tomatoes, then add the basil, sugar, salt, and pepper, and bring them to a simmer over low heat for about 15 to 20mins or until the tomatoes soften/burst and the sauce starts to reduce. Add in the meatballs and let them simmer for 5 more minutes. Make sure the meatballs are covered in some of the sauce, then dot over some mozzarella balls, place them under the grill and broil until the cheese melts. Remove the pan and garnish with fresh basil. Serve straight from the pan with garlic bread!
