Ingredients:

  • 1 cup of long grain rice, uncooked
  • 16 ounces of chicken broth
  • 1 small onion
  • 1-2 cloves of garlic, minced
  • 2 tbsp of oil
  • 1 (10.5 ounces) can of condensed cream of chicken or cream of mushroom
  • 4 ounces or ½ cup of milk
  • 4 tbsp of butter, melted
  • 8 ounces block of sharp cheddar cheese
  • 16 ounces of frozen chopped broccoli, thawed
  • Pepper, to taste

Directions:

Step 1

Place a large pot on a stove over low heat, then add some oil, and let it heat up before adding the rice. Stir and toast the rice on low heat until nice and golden brown in color, then add the sliced onion, and saute them as you continue to toast the rice. Next, add the minced garlic and chicken broth, then give them a good stir to combine, and cover with the lid of the pot. Let it simmer while covered over low heat for about 18 to 20 minutes, then fluff it up a bit, set aside, and allow to cool down before adding the rest of the ingredients.

Step 2

Once cooled down, add the condensed cream of chicken or mushroom, pepper, melted butter, thawed chopped broccoli, milk, and sharp cheddar cheese, then mix them all together until well combined, and transfer to a buttered baking pan. Spread them evenly and press down, then cover with foil, and bake at 350°F for about 35 to 40 minutes covered. After baking, remove the foil cover, then bake it for another 10 to 15 minutes, serve, and enjoy!
