Season the cauliflower with oil, salt, and pepper, then toss them together, and lay on a large sheet pan spreading them out in a single layer. Put them in a preheated oven at 220°C or 430°F (200°C fan), then let them roast for about 20 minutes or until firm with a little char on them, and then remove them from the oven. Turn the heat of the oven down to 180°C or 350°F, then proceed to prepare the cheese sauce, but first, heat up the milk and cream on a stove or microwave. Now, place a large saucepan or small pot on a stove over medium heat, melt the butter, then add the flour and let it cook for about 3 minutes while stirring regularly.

Pour in half the portion of the hot milk and cream, then once the roux is dissolved and the mixture has thickened, add the remaining half of the milk and cream, and stir them well for about 1 minute until thick enough to coat a wooden spoon. Turn the stove off, but leave the pot on top of it, then stir in the salt, nutmeg, and both of the cheese, and once the cheese has melted, add the cauliflower. Give them a good toss until evenly coated, then transfer them to a baking dish, and sprinkle both of the cheese all over the top. Put in the preheated oven and let it bake at 180°C or 350°F for about 30 minutes or until the cheese melted and the cauliflower is bubbly and golden. Garnish with some parsley if desired, then let it cool for about 5 minutes before serving, and enjoy!
