Roasted Sweet Potatoes
Maple Dressing
Step 1
In a baking dish, add the olive oil, ground cinnamon, salt, and pepper, then give them a good mix, and spread it evenly at the bottom of the baking dish. Add the sweet potato chunks, then toss them until well coated, and spread them evenly in a single layer. Place it in an oven preheated at 180°C or 356°F, then allow it to roast for about 20 minutes, and then take it out of the oven.

Step 2
Spread the vegan bacon bits and pumpkin seeds over the potatoes, then toss them well to combine, and then put them back in the oven to roast for 5 more minutes. Boil some water in a pot, then put in the greens, and blanch them for a few seconds. Shock the greens in an ice bath, then drain off all the excess water, and prepare the remaining ingredients. In a baking dish, add the pecans and pistachios, then roast them in the oven for about 5 minutes, and set them aside for later.
Step 3
In a mixing bowl, add the French mustard, olive oil, maple syrup, and a pinch of salt and pepper, then stir everything together until uniform and combined. In a large mixing bowl, add the sliced apples, lemon juice, pomegranate jewels, and dried cranberries, then toss them to combine, add the roasted sweet potatoes and bacon, and continue to toss until well mixed. Add the roasted nuts and blanched greens, then give it a final mix, and serve it drizzled with the prepared maple dressing. Enjoy!
