This holiday side dish recipe by Catherine’s Plates on YouTube will surely impress your family and guests, because not only does it look amazing but it also tastes incredibly delicious. Expect clean plates at your Thanksgiving party because these yummy deviled eggs will surely be gone in just a few minutes.

Ingredients:

  • 6 eggs or more as you like
  • 3 tbsp of mayonnaise
  • 2 tsp of yellow mustard
  • ¼ tsp of salt, to taste
  • ¼ tsp of black pepper, to taste
  • ½ to 1 tsp of paprika, or more until you reached desired pumpkin color
  • 2 green onions

Directions:

Step 1

Place the eggs on the rack of an instant pot, then pour 1 cup of water into the bottom of the pot, and lock its lid in place. Set the instant pot under manual pressure, then let the eggs cook for about 5 minutes, and do a natural release for 5 minutes. Quickly release the rest of the pressure, then open the lid away from you, and transfer the eggs to a large bowl filled with ice and water, peel the eggs. You can also boil the eggs on a stovetop, simply place the eggs inside a pot, then fill it with water just above the eggs, and bring it to a boil.

Step 2

Once boiled, let them sit in the pot with the heat off for about 6 to 7 minutes, then transfer to a bowl filled with ice water for 5 minutes, and start peeling the eggs. Slice the eggs lengthwise, then remove the yolk, place it into a small mixing bowl, and the egg whites on a plate. Grab the bowl of egg yolks, then add the mayonnaise, mustard, salt, pepper, and paprika, and mix them together until well combined. Transfer the yolk mixture to a piping bag, then pipe them into each egg white, and draw two lines down the yolks using a toothpick. Garnish each egg with ¼ inch of green onions to resemble the stem of the pumpkin, then serve, and enjoy!
