Ingredients:

  • 6 – 8 lbs whole brisket (trimmed)
  • 2 lbs sliced white onions
  • 2 cups of beef broth
  • 1/3 cup to 1/2 cup homemade brisket rub

Homemade Dry Rub:

  • 2 1/2 tbsp salt
  • 1 1/2 tbsp ground black pepper
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tbsp lemon powder
  • 3 tbsp brown sugar
  • 4 tbsp smoked paprika
  • 1 1/2 tsp ground cumin

Barbecue Sauce:

  • onion (from the roasting pan)
  • 1 1/2 to 2 tbsp brisket rub
  • 8 oz tomato puree
  • 1 1/2 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1/4 cup brown sugar (packed)
  • 1 tbsp spicy brown mustard

Directions:

Step 1

First, make the homemade dry rub. In a bowl, combine 2 1/2 tbsp salt, 1 1/2 tbsp ground black pepper, 2 tbsp garlic powder, 2 tbsp onion powder, 2 tbsp lemon powder, 3 tbsp brown sugar, 4 tbsp smoked paprika, and 1 1/2 tsp ground cumin. Mix well. Next, rub 1/2 of the homemade rub onto the whole brisket. Set the other half of the rub in a sealed container and set aside. Once you’re done seasoning the brisket, put it in a large ziplock bag and place it in the refrigerator. Allow it to marinate overnight for best results.

Step 2

Next, place a roasting pan on the stovetop to low heat. Add 1/4 cup of cooking oil and sear the brisket for five minutes on each side. After searing, set the brisket aside, then add the onions to the same roasting pan. Season them with 1/2 tsp of the reserved brisket rub. Saute until the onions turn translucent, then add 2 cups of beef broth. Mix well, then put the brisket back into the pan, fat cap side up. Cover tightly with foil and cook in a preheated oven at 350 degrees F for an hour per pound. Once done cooking, let the brisket rest for one to two hours.

Step 3

In the meantime, make the barbecue sauce. Add the onions from the roasting pan and season with 1 1/2 tbsp of brisket seasoning in a saucepan over low heat. Mix well to combine, then add 8 oz tomato puree, 1 1/2 tbsp apple cider vinegar, 1 tbsp Worcestershire sauce, 1/4 cup brown sugar, and 1 tbsp spicy brown mustard. Continue mixing until well combined, then simmer for five to ten minutes.
