There are a lot of different ways of making chili and various recipes online that you can find and try to recreate at home. But for me, the best way to make chili is by using the classic and most authentic recipe, just like this one by Tasting History with Max Miller on YouTube! It goes as far back as 1910 and it is so good that I would never want chili served any other way again.

Ingredients:

  • 2 pounds of beef, chopped into small cubes
  • 2 tsp of salt
  • ¼ cup of tallow, rendered beef fat
  • 2 tbsp of lard, rendered pork fat
  • 1 cup of minced onion
  • 3 tbsp of Gebhardt’s Eagle chili powder, or any brand
  • 2 tbsp of minced garlic
  • 3 cups of hot water

Directions:

Step 1

In a large mixing bowl, add the beef and tallow, then mix them together, season them with salt, and give them a good mix. Place a large pot on a a stove over medium-high heat, then melt the lard, and add the onion. Toss and fry them for about 5 minutes or until translucent making sure to move them around so they don’t burn, then add the meat, and keep on turning them to let most of the beef sear at the bottom of the pot evenly.

Step 2

Once everything is nice and brown, leave them be and only stir every few minutes, then once all of the juices of reduced, pour in the hot water, and add the minced garlic along with the chili powder. Stir everything together until well mixed, then allow it to boil, and then lower the heat to let it simmer with the lid off for about 1 hour to 1 hour and 30 minutes depending on your meat. After an hour or so, turn off the heat, then serve on the side of a tortilla, cornbread, or any of your favorite dishes, and enjoy!
