Place a skillet over medium heat and add the oil. Add the potatoes, chorizo, onions, bell pepper, and jalapeno. Season with pepper and garlic powder. Mix and cook for about 7 minutes or until the potato is almost tender.
Add the eggs, water, salt, and pepper into a bowl. Whisk to combine.
