Ingredients:

  • 2/3 cup raw cashews, soften in hot water
  • 1 cup unsweetened soy milk
  • 4 garlic cloves
  • 1 tsp onion powder
  • 1/2 tsp dried dill
  • 1/2 tsp sea salt
  • 1 tsp light miso paste
  • 1 tbsp nutritional yeast
  • 1/2 tbsp lemon juice
  • 10 – 12 grinds of black pepper

For the filling:

  • 2 medium yellow potatoes, diced
  • 2 medium carrots, finely chopped
  • 6 mushrooms
  • 1 cup vegan ground beef
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1/2 cup frozen green beans

Topping:

  • frozen tater tots
  • red pepper flakes
  • freshly chopped chives

Directions:

Step 1

Preheat your oven to 400 degrees F. Next, prepare your veggies by chopping them accordingly. Put your chopped carrots and potatoes on a baking sheet, season them with a pinch of salt, and spray them with some oil. Take four garlic cloves and throw them onto the pan. Roast them in the oven for 15 to 20 minutes. In the meantime, saute the mushrooms in a large pan over medium-high heat. After three to four minutes, season them with salt, then deglaze the pan with a splash of water if needed. Next, add ground beef, corn, peas, and green beans. Cook for three to four minutes or until the veggies are mostly thawed.

Step 2

Once your cashews are softened, transfer them to a mixing jug, then add 1 tsp onion powder, 1/2 tsp sea salt, 1/2 tsp dried dill, 1 tsp light miso paste, 1 tbsp nutritional yeast, ground black pepper, 1/2 tbsp lemon juice, 1 cup unsweetened soy milk, and the roasted garlic cloves. Mix it well. After this, add the roasted potatoes and carrots to the pan along with the sauce. Mix to combine well and pour it into the casserole dish. Now, line the tater tots on top of the casserole. Spray some oil on the tater tots and season them with salt and pepper. Pop this into the oven and bake for 35 minutes.
