When it comes to side dishes, I prefer a good and fresh coleslaw, just like this recipe by Chili Pepper Madness on YouTube. This coleslaw is so tasty and easy to make, plus, it’s the perfect topping for sandwiches, too. I do this often because my family loves this just as much, and it’s much better when stored in the fridge for an hour or so because all of the flavors really mingle together that way and they become even more delicious than they already are.

Ingredients:

Coleslaw

  • 1 medium-sized head of cabbage, shredded
  • 1 large carrot, finely shredded
  • red bell pepper, shredded
  • 1 small red onion, thinly sliced

Vinaigrette/ Dressing

  • 1/3 cup of olive oil
  • 1/3 cup of apple cider vinegar
  • 2 tbsp of honey
  • 1 tbsp of spicy brown mustard
  • 1 tbsp of dried basil
  • 1 tsp of dry mustard
  • 1 tsp of celery seed
  • 1 tsp of red chili flakes
  • Salt, to taste
  • Pepper, to taste

Prepare the cabbage, carrot, bell pepper, and onion, then add them to a large mixing bowl, and give them a good toss. In a separate small mixing bowl, add the olive oil, apple cider vinegar, honey, spicy brown mustard, dried basil, dry mustard, celery seed, red chili flakes, and salt and pepper to taste, then whisk them all together until incorporated and combined. Pour it all over the veggies or slaw mixture, then give them a good toss until evenly distributed and combined, and transfer them to a serving bowl. You can serve it immediately or cover it, then place it in the fridge, and allow it to chill for about 1 hour to let the flavors develop.
