Ingredients:

  • 1 lb ground beef
  • 1 yellow onion, diced
  • 1 packet of taco seasoning
  • 1 can diced tomatoes (with green chiles)
  • 1 can of black beans, undrained
  • 1 can of pinto beans, undrained
  • 2 cups of frozen corn
  • 1 1/2 cups of water
  • 1 can diced green chilis (optional)
  • 1 packet of ranch dressing mix

Toppings:

  • shredded cheese
  • sour cream
  • chopped onion
  • avocado

Directions:

Step 1

In a large heavy-bottomed pot over medium-high heat, add the ground beef and the diced onions. Season with 1 packet of taco seasoning, a bit of chili powder, cumin, and smoked paprika. Break up the meat and cook it until it turns brown. Once the meat is brown, go ahead and add the rest of the ingredients: 1 can of diced tomatoes with green chiles, 1 can of black beans, 1 can of pinto beans, 1 can of diced green chilis, 2 cups of frozen corn, and 1 1/2 cups of water. Stir everything well together, then bring it to a simmer (reduce the heat to medium-low at this point, partially covering the pot.) Let it simmer for 30 minutes.

Step 2

In the meantime, prepare your chosen toppings. You can add some shredded cheese, sour cream, chopped onions, and diced avocado. Once the soup is ready, ladle it into a serving bowl and add your toppings. Serve and enjoy!
