Step 1
Cut the chicken into small bite-sized pieces, then transfer them to a large mixing bowl, and season them with salt, black pepper, paprika, and all-purpose seasoning or Chinese 5-spice. Give them a good mix and set them aside, in a separate bowl, add the flour, baking powder, cornstarch, and a bit of water, and mix them until thick batter consistency. Pour the batter into the chicken, then give them a good mix until well coated, and set them aside while preheating a pot of oil over medium heat.

Step 2
Cut the veggies, then get another bowl, and mix the sugar, ketchup, pineapple juice, vinegar, and soy sauce until uniform and combined. Set the sauce aside, then start frying the chicken in batches to not overcrowd the pan, and allow them to cook for about 5 minutes or until evenly crispy and golden brown. Remove the cooked chicken with a slotted spoon, then place them on a strainer bowl to drain off the excess oil, and set them aside.
Step 3
Remove most of the oil from the pan leaving only enough to saute, then add the garlic, stir for a few seconds before adding the chopped onion, and continue to saute for about 1 minute or until translucent. Add the chopped bell peppers, then give them a good toss, and cook for 30 seconds to a full minute before adding the chopped pineapple. Continue to stir, then add the sauce, give them a good toss before adding the cooked chicken, and continue to toss until evenly coated. Turn off the heat, then serve, and enjoy!
