Ingredients for Sweet & Sour Chicken:
- 1 (24oz) bag of popcorn chicken
- 1 tbsp of vegetable oil
- 1 green bell pepper, diced large
- 1 red bell pepper, diced large
- 1 cup of sweet onion, diced large
- ⅓ cup of water
- ⅓ cup of pineapple juice
- ⅓ cup of white vinegar
- ⅔ cup of granulated sugar
- 2½ tbsp of ketchup
- ½ tsp of salt
- 1 tbsp of water
- 1 tbsp of cornstarch
- 1 cup of pineapple chunks, drained and juice reserved
How to Make Sweet & Sour Chicken:
Step 1
Prepare and cook the popcorn chicken according to the package instructions and set them aside for later. Place a large wok or skillet on a stove over medium heat, then add a tablespoon of vegetable oil, and heat it.
Step 2
Add the diced bell peppers and onion to the hot oil, then saute them for about 5 to 8 minutes or until softened. In the same wok or pan, add the water, pineapple juice, white vinegar, granulated sugar, ketchup, and salt, then give them a good stir, and bring the mixture to a simmer.
Step 3
In a small bowl, whisk together the water and cornstarch until uniform, then add it to the wok or skillet, and stir them well to incorporate until the sauce has thickened.
Step 4
Immediately add the cooked popcorn chicken followed by the pineapple chunks, then give them a good toss until evenly coated, and turn off the heat. Serve immediately and enjoy!
