This is a good dish that you can make at the last minute and it’s ready in as fast as 30 minutes. If you’re a busy person or it’s just a busy day and you’re running out of options for dishes to cook, then this is a great idea for you!
Step 1
Prepare and cook the popcorn chicken according to the package instructions and set them aside for later. Place a large wok or skillet on a stove over medium heat, then add a tablespoon of vegetable oil, and heat it.
Step 2
Add the diced bell peppers and onion to the hot oil, then saute them for about 5 to 8 minutes or until softened. In the same wok or pan, add the water, pineapple juice, white vinegar, granulated sugar, ketchup, and salt, then give them a good stir, and bring the mixture to a simmer.
Step 3
In a small bowl, whisk together the water and cornstarch until uniform, then add it to the wok or skillet, and stir them well to incorporate until the sauce has thickened.
Step 4
Immediately add the cooked popcorn chicken followed by the pineapple chunks, then give them a good toss until evenly coated, and turn off the heat. Serve immediately and enjoy!
