Ingredients:

Cobbler Filling:

  • 3 medium to large sweet potatoes
  • 1 stick of salted butter
  • 1 to 1 & 1/2 cups of granulated sugar
  • 2 – 3 tbsp of light or dark brown sugar
  • 2 – 3 tbsp nutmeg
  • 1 – 2 tbsp of light corn syrup
  • 3 tbsp of vanilla extract

For the crust:

  • 1 cup of self-rising flour
  • 1 cup of granulated sugar
  • 1 cup of milk

Directions:

Step 1

Peel, rinse, and chop the sweet potatoes and boil them for 15 minutes. While your sweet potatoes are boiling, go ahead and make the crust. In a bowl, add 1 cup of self-rising flour, 1 cup of granulated sugar, and 1 cup of milk. Whisk until well combined, then set it aside. Next, in a cast iron skillet, add one stick of melted butter, then add the sweet potatoes. (Do not drain the sweet potatoes as you will need the liquid later.)

Step 2

After adding the sweet potatoes, add 1 & 1/2 cups of granulated sugar, 2 to 3 tbsp nutmeg, 1 to 2 tbsp light corn syrup, and 3 tbsp vanilla extract. Lightly arrange the sweet potatoes, then add 2 to 3 tbsp light or dark brown sugar followed by the crust batter you set aside earlier.  Place it in the oven and bake it until the top is bubbling. (Temperature is about 350 degrees F or so).
