Sweet and Sour Sauce
Step 1
In a large bowl, add the ground beef, breadcrumbs, creole seasoning, eggs, grated onions, and garlic powder, then mix everything until combined, and then shape them into small balls. Place them on top of a wire rack on a roasting pan, then grease them nicely with nonstick cooking spray, and place them in an oven preheated to 375°F.
Step 2
Allow them to bake for about 12 minutes, then halfway through the cooking time, flip them over, and then finish cooking the meatballs. In a small bowl, add the ketchup, tomato paste, salt, brown sugar, vinegar, pineapple juice, cornstarch, and chicken broth, then whisk to combine, and set the sauce aside. Place a pan on a stove over medium heat, then heat some oil, add the veggies, and saute them for about 2 to 3 minutes.
Step 3
Season them with some salt and pepper, then saute for another 30 seconds, add the minced garlic, and give them a good mix. Pour in the sauce, then give them a good stir, and cook them for about 4½ minutes or until the sauce has thickened. Add the pineapple chunks, then mix them well, and keep cooking them for an additional 2 to 3 minutes letting the meatballs soak up all the sauce. Serve and enjoy!
