In a bowl, add 1 & 1/2 cups of flour, 1/2 cup of cornstarch, and 1 tsp salt. Whisk them to combine. Next, add 1 & 1/4 cup of water, 1 tsp cooking oil, and 1 beaten egg, then whisk. After this, add the chopped chicken breast into the flour mixture. Mix well to fully coat the chicken breast with the flour mixture. Leave it for 10 to 20 minutes. Moving on with the sauce. In a bowl, add 3 tbsp pineapple juice, 1/4 cup rice vinegar, 2 tbsp light soy sauce, 1/4 cup ketchup, 1/4 cup sugar, and 2 tsp garlic powder. Whisk them well to combine. Set it aside.

In a pan with cooking oil enough for frying, gently submerge the coated chicken breasts. Deep fry them until golden brown. After frying, transfer them to a plate lined with a paper towel. Set them aside. Next, in a pan, add 2 tbsp cooking oil. Add the chopped onions and saute until soft. After this, add the chopped green bell pepper and red bell pepper, then stir. Add the 1 cup pineapple chunks and continue to stir. Add the sweet and sour sauce that was made earlier and bring it to a simmer. After this, add the fried chicken breasts, then the cornstarch mixture. Season with 1/2 tsp black pepper. Mix well to combine. Sprinkle some sesame seeds for garnish.
