Ingredients for Stuffed Zucchini Boats:

  • 4 medium zucchini
  • 2 tsp of extra virgin olive oil
  • 1 pound of lean ground turkey
  • 3 cloves of garlic, minced
  • ½ onion, chopped
  • ½ green pepper, chopped
  • ½ cup of reserved zucchini meat
  • 1 tbsp of Italian seasoning
  • 1 cup of strained tomatoes
  • ½ cup of part-skim mozzarella cheese, shredded

Step 1

Preheat your oven to 350°F, then fill a large pot with water, and bring it to a boil. Slice the zucchini in half lengthwise, then scoop out the center leaving about ¼ inch around the sides, and reserve the scooped-out zucchini for later.

Step 2

Place the zucchini in the boiling water, then let it cook for 1 minute, remove it from the water, and set it aside to cool. Place a large skillet on a stove over medium-high heat, then add the olive oil, and let it heat before adding the ground turkey.

Step 3

Break it apart and cook it until lightly browned, then push it to one side of the pan, and in the empty spot, put the garlic, onion, green peppers, zucchini meat, Italian seasoning, strained tomatoes, salt, and pepper. Mix everything to combine, then let it cook for about 15 minutes or until the veggies are tender, and turn off the heat.

Step 4

Place the cooled zucchini halves in a baking dish, then fill each half with about ½ cup of filling, and top them with shredded mozzarella cheese. Cover them with aluminum foil, then place them in the preheated oven, and allow them to bake for about 30 minutes or until the cheese has melted. Serve and enjoy!
