I never get tired of eating this, whenever I need good food to fill my stomach, this is my go-to recipe.

Ingredients:

  • 1½ pounds of chicken breasts
  • ½ cup all-purpose flour or gluten-free flour
  • ¾ tsp salt
  • ½ tsp black pepper
  • 2 large eggs, beaten
  • ½ cup plain bread crumbs
  • 1/3 cup parmesan cheese, finely grated
  • 3 tbsp extra light olive oil, plus more as needed
  • 2 cups marinara sauce
  • 1½ cups mozzarella cheese, divided, shredded
  • 6 fresh basil leaves, finely chopped, to garnish

Directions:

Step 1

Season the chicken breasts with salt and black pepper to taste, then slice the breast through without cutting it all the way to create a pocket. Stuff each chicken with 2 to 3 tablespoons of mozzarella, then press the edges together to seal. Prepare 3 large mixing bowls, then in the first bowl, pour the flour, in the second bowl, beat the eggs, and in the third bowl, stir together the bread crumbs and 1/3 cup of the parmesan cheese. Grab 1 piece of stuffed chicken breast, then carefully dredge it in flour, and tap off any excess. Dip it into the eggs, then coat it with the bread crumbs and cheese mixture. Proceed to coat the other stuffed chicken in the same process.

Step

Place a large and deep pan or a dutch oven on a stove over medium heat, then add the oil, and let it heat up. Once the oil is hot enough, start placing the breaded chicken in a single layer, then cook them for about 4 minutes on each side or until both sides are golden brown. Pour the marinara sauce around and in between each chicken, then sprinkle the remaining cheese over the chicken, and pop them in a preheated oven at 400°F. Bake them for about 15 to 20 minutes uncovered until the chicken is cooked through. Garnish with freshly chopped basil then serve.
