Start by preparing the strawberry puree. In a food processor or blender, add the strawberries, sugar, vanilla, and sherry (optional). Pulse until you have a fine puree, then pour into a large bowl. Set it aside for later.
Make the cake. Cube the Angel Food Cake into 1×1-inch pieces.
Prepare the pudding based on package instructions. Make sure it’s enough for 6 servings.
Once your pudding is ready, add the cream cheese and whisk until smooth using a mixer. If clumps form, keep whisking. Fold in the thawed Cool Whip.
Time to assemble the dessert. Drop the cubed cake into the prepared strawberry puree and turn to coat well. Arrange each piece on the bottom of a trifle dish. Next, add a layer of the filling, then add a big amount of chopped strawberries. If you want, add a ring of sliced strawberries around the edge of the bowl for garnish.
Repeat the same layers until you fill the bowl. Garnish the top with more strawberries.
You can serve it right away or refrigerate it overnight.
