One dessert I will probably never get tired of eating is poke cake, and more specifically, a strawberry jello version. It got its name because of the holes that are poked across the entire cake which will help soak in more flavor, then the jello is the layer above it which is literally strawberry jelly.

Step 1
Preheat your oven to 350°F, then grease a 9×13-inch baking dish with nonstick cooking spray, and set it aside. Prepare and bake the cake mix according to the package instructions, then let it cool in the pan and on a wire rack for about 1 hour, and then gently poke holes evenly across the entire cake using the handle of a wooden spoon.
Step 2
In a bowl, mix together the strawberry jello mix and hot water until dissolved, then add the cold water, and keep stirring for 1 more minute. Pour the jello mixture evenly over the cooled cake, then cover it with plastic wrap, and place it in the refrigerator to chill for about 2 to 4 hours. Meanwhile, slice or dice the strawberries, then toss them in sugar and store them in an airtight container.
Step 3
Place the strawberries in the refrigerator to chill until ready to decorate the cake. Remove the cooled cake from the refrigerator, then spread the whipped cream on top, and cover it again with plastic wrap. Put it back in the refrigerator, then let it chill until ready to serve, and then top it with the sweetened strawberries. Serve and enjoy!
