I’ve been craving a good strawberry cake for a while, and now I’ve finally found the best recipe that suits my craving. ThatGirlCanCook! on YouTube is growing on me and becoming one of my comfort YouTubers with her delicious and satisfying food recipes.
Ingredients:
Frosting
Cake
Crumble
Directions:
Prepare all the needed ingredients.
Preheat the oven to 350F.
Grease two round 8-inch cake pans with baking spray and place parchment paper on each pan. Add in 1 pack or 1 oz of freeze-dried strawberries in the food processor bowl. Blend until the strawberries are a fine powder.
In a medium-sized mixing bowl, add 4 sticks of softened unsalted butter and whip on medium speed for 5 minutes. Make sure to occasionally scrape the sides to ensure that all of the butter is incorporated.
Next, add 2.5 cups of powdered sugar by the cup and blend to combine. Add 1 tsp of vanilla extract and combine. Also, add in the powdered strawberries and mix until well combined.
In a separate large mixing bowl, add 1 box or 15.25 oz of strawberry cake mix, 1 box or 3 oz of strawberry Jello Mix, and 1 cup all-purpose flour. Whisk all the ingredients together until well combined. When the dry ingredients are well combined, add in 4 eggs, 1 cup of milk, ½ cup of vegetable oil, and 1 tsp of Vanilla extract. Mix the batter until everything is smooth and creamy. Pour the batter into the greased and lined cake pans, using a measuring cup or ladle to accurately pour even amounts.
Let the batter sit for 5 minutes and then place them in the oven to bake for 25–30 minutes at 350F. When done, allow the cakes to cool for at least 20 minutes.
Remove the cakes from the pans and carefully discard the parchment papers. Level the cakes using a sharp knife. Add a scrape of frosting to a disposable cake plate and place the first cake on it. On top of the first cake, add a generous amount of cream for the filling. Then, add the second cake on top.
Frost the cake with a thick coat of frosting on all the outside parts.
Blend 1-2 cups of Nilla Wafers for the crumble and transfer them to a pan. Add in 1/3 cup of the strawberry jello mix and whisk together. While whisking, add 2 tbsp of melted butter and whisk until you get the crumble texture. Add the crumble mixture to the cake, starting from the sides and working up to the top layer. Add the remaining frosting cream mixture to a pastry bag and start decorating your cake.
Lastly, top with fresh strawberries.
Serve and enjoy!
