Ingredients for Strawberry Coconut Dessert Cups:

  • 100g or 3.5oz of vanilla cake or muffins
  • ¾ cup of strawberries, chopped

Coconut Pudding

  • ¼ cup of cornstarch
  • 2 cups of milk
  • 3 tbsp of sweetened condensed milk or sugar
  • 1 tsp of vanilla extract
  • 50g or 1/3 cup or 1.7oz of white chocolate, chopped
  • 3 tbsp of desiccated coconut
  • ¼ cup of butter

Whipped Cream

  • ¾ cup of whipping cream, at least 33% fat
  • 2 tbsp of sweetened condensed milk
  • 1 tsp of vanilla extract

Step 1

Crumble the cake on 5 cups evenly, then press them down gently, and set them aside. Put the cornstarch in a saucepan, then gradually pour in the milk while whisking consistently until dissolved.

Step 2

Add the sweetened condensed milk or sugar and vanilla extract, then keep whisking, and turn on the heat to medium. Once warm, add the white chocolate, then whisk until dissolved, add the desiccated coconut, and keep mixing until boiling and thickened.

Step 3

Turn off the heat, then add the unsalted butter, and whisk until smooth and melted. Pour evenly into each cup while still hot, then place the dessert cups in the refrigerator, and let them chill for at least 1 hour or until completely cool.

Step 4

Chop the strawberry into small pieces and set them aside, then in a mixing bowl, beat the whipping cream, sweetened condensed milk, and vanilla extract over low speed, then gradually increase the speed to medium until stiff peaks form, make sure to not overmix.

Step 5

Transfer the cream to a piping bag, then add some diced strawberries to each cup, and top them with the cream. Garnish with whatever you want, then put them back in the fridge, and let them chill for at least an hour before serving. Enjoy!
