Ingredients:

Tart

  • 4½ tbsp unsalted butter
  • ¼ cup powdered sugar
  • A pinch of salt
  • Lemon zest
  • 1 egg yolk
  • ¾ cup cake flour
  • 2¼ tbsp ground almonds

Baked Cheesecake

  • ¾ cup cream cheese
  • ¼ cup mascarpone cheese
  • 3¼ tbsp sugar
  • 2 tsp cornstarch
  • 1 egg
  • ¼ cup heavy cream
  • ¼ cup non-sugar yogurt
  • Lemon zest
  • 2 tsp lemon juice

Cheese Cream

  • ¼ cup cream cheese
  • ¼ cup mascarpone cheese
  • 1¼ tbsp sugar
  • ¼ cup heavy cream
  • 1 tsp vanilla extract

Strawberry Cream

  • ¼ cup heavy cream
  • ¾ tbsp sugar
  • ½ tbsp strawberry powder

Directions:

Step 1: Tart

In a large mixing bowl, add the powdered sugar, salt, grated lemon peel, egg yolks, and unsalted butter, then give them a good mix until well combined, and sift over the flour and ground almond. Give them a good mix to combine, then wrap the dough in plastic wrap, and roll it out to 3mm thick. Place the dough in the refrigerator to set for about 1 hour, then spread the dough in a tart pan, and put it back in the refrigerator to sit for 30 more minutes. Line the inside of the tart tin with aluminum foil, then place baking weights on top, and bake it in a preheated oven at 180°C or 356°F for about 15 to 20 minutes.

Step 2: Baked Cheesecake

Mix together the heavy cream and unsweetened yogurt until incorporated, then in a separate mixing bowl, fold and mix together the cream cheese, mascarpone cheese, and sugar until well combined. Add the cornstarch, whole eggs, cream mixture, grated lemon peel, and lemon juice, then continue to mix them until fully combined and smooth, and pour it into the prepared tart crust. Place it in the preheated oven, then allow it to bake at 150°C or 302°F for about 30 to 35 minutes, and remove it from the heat allowing it to cool down before putting it back in the refrigerator to chill for at least 3 hours or more.

Step3: Cheese Cream and Strawberry Cream

In a large mixing bowl, add the cream cheese, mascarpone cheese, sugar, heavy cream, and vanilla extract, then whisk them all together while chilling in ice water until combined, and then spread it over the cooled cheese tart. Wash and devein the strawberries, then place them all over the top, and cover them with more cheese cream. In another mixing bowl, add the heavy cream, sugar, and strawberry powder, then give them a good whisk while chilling in ice water, and transfer them to a piping bag. Pipe it around the cheese cream, then serve, and enjoy!
