This yummy recipe by The Stay At Home Chef on YouTube is another great example that most of the time simple food could taste incredibly delicious, too. What’s even better is that you can make this soup even if you are too busy or in a hurry, because it only takes 45 minutes and requires little effort to prepare.
Step 1
Rinse the vegetables, then chop them, and set them aside. Place a dutch oven on a stove over medium-high heat, then add the butter and olive oil, and let them heat up. Once the butter is melted and the oil is hot enough, add the chopped onions, celery, and carrots, then toss them together, and let them cook for a few minutes or until the onions have softened making sure not to brown them.

Step 2
Add the garlic, potatoes, green beans, and corn, then stir them together to combine, and let them saute for about 4 to 5 minutes before adding the thyme and oregano. Next, add the canned tomatoes and broth, then stir them together to combine, and bring it to a boil. Reduce the heat setting to low and let it simmer for about 20 to 25 minutes. Once done cooking, serve and enjoy!
