Ingredients:

  • 3 tbsp of extra virgin olive oil
  • 1-2 pounds of Italian sausage, sweet, hot, or mixed, casing removed
  • 1 bunch of escarole, discard the tougher white bottoms, and roughly chop
  • 6 cloves of garlic, minced or pressed
  • 3½-4½ cups of chicken broth
  • 1 tsp of black pepper
  • 1 pound of orecchiette pasta
  • 2 (15.5oz) cans of cannellini, navy or great Northern beans
  • ½-1 cup of Parmesan cheese, grated, plus more for topping

Directions:

Step 1

Place a Dutch oven or nonstick pot on a stove over medium-high heat, then add the oil, and allow it to heat up. Add the sausage, then break it apart, and cook it for about 2 to 3 minutes until crumbled and nice and brown. Add the escarole and garlic, then saute them and toss together for about 1 to 2 minutes or until wilted. Pour the broth, then scrap the bottom of the pan to deglaze, add the pepper, and give them a good stir until nice and combined. Add the pasta, then stir them together, increase the heat to high, and bring it to a boil.

Step 2

Once boiling, lower the heat to medium or medium-high, then cover the pot with the lid, and allow it to cook for 10 to 15 more minutes making sure to stir every 5 minutes. Turn the heat to low once the liquid has reduced and been absorbed by the pasta and is fully cooked, but there should still be liquid left. Now, add the beans drained and rinsed or with the juice, then add the parmesan cheese, and stir them all together until combined. Allow it to rest for about 5 minutes, then serve them with more cheese on top if desired, and enjoy!
