Ingredients:

  • 30 pieces of cream-filled cookies
  • 1 cup of milk
  • 1 tsp of baking powder

Ganache

  • ½ cup of chopped chocolate
  • ¼ cup of all-purpose cream or whipping cream

Optional

  • Shaved cream, for decoration

Directions:

Step 1

Put the cookies in a food processor or blender, then process or blend them until they turn into fine crumbs or you can put the cookies inside a Ziploc bag and crush them with a rolling pin. Put the crushed cookies in a large mixing bowl, then add the milk, and mix them together until nice and smooth making sure there are no more lumps. Next, add the baking powder, then continue mixing them together until well combined, you can also use a hand mixer to do this, and then pour the batter into a baking pan with the bottom lined with parchment paper. Place a pan on a stove over low heat, then pre-heat the pan while covered for about 5 minutes, and place a wire rack inside.

Step 2

Place the chocolate cake pan inside the pan and on top of the wire rack, then cover it with the lid of the pan, and cook it for about 45 minutes over low heat. Once a toothpick inserted in the center of the cake comes out clean, then it’s done cooking, remove it from the heat, and let it cool completely. Unmold the cake, then remove the parchment paper, and pour the ganache frosting all over the top. To make the ganache, simply combine the chocolate and cream in a microwave-safe bowl, then melt them together in a microwave for 1 minute, or in a double-boiler filled with water. You can also decorate the top with some shaved chocolate if desired.
