Soup is a great dish to serve on the side or enjoy as is, sometimes, I can’t eat my food without a yummy soup served along with it which is why I keep a list of all of my favorite recipes, that way I can make different versions depending on what taste would match the meal.

This one by Preppy Kitchen on YouTube is one of my most recent favorites and is something that I make often. It’s very delicious and it’s loaded with lots of chicken and tortilla strips that are so fun to chew on, and it’s super simple to prepare, too. Learn how now by watching the video tutorial below.

Step 1
Place a large Dutch oven on a stove over medium-high heat, then heat the oil, and cook the tortilla strips in batches for about 1 minute or until nice and crispy. Remove the cooked tortilla strips with a slotted spoon, then place them on a plate lined with paper towels to drain off the excess oil, and then season them with some salt.
Step 2
Lower the heat to medium, then in the same pot, add the onion, garlic, and jalapeno, and give them a good stir, cook them for about 4 minutes or until softened. Add the broth, tomatoes, beans, corn, chicken, chili powder, cumin, salt, and pepper, then bring the mixture to a boil, reduce the heat to medium-low, and let it continue to simmer for about 25 minutes while stirring occasionally.
Step 3
Turn off the heat, then remove the pot, and on a separate plate, shred the chicken. Put the pot back on the stove over medium-low heat, then put the shredded chicken back into the pot, and stir them to combine. Add the lime juice and stir them well, then let it simmer for 5 more minutes, and serve. Enjoy!
