Preparing a good and flavorful dish is always effective in lifting my mood after a busy and tiring day. I have encountered a situation before where I have limited ingredients and time for preparation and my go-to recipes are always super quick and easy to cook just like these stir-fried potatoes and mushrooms by KAZAN on YouTube! This is super yummy and goes well when served on the side of any of your favorite dishes.

Ingredients:

  • 250 grams or 2 cups of mushrooms
  • 600 grams or 4¼ cups of potatoes
  • 1 onion, roughly chopped
  • 20 grams or 1½ tbsp of butter
  • Salt, to taste
  • Black pepper, to taste
  • 1 clove of garlic, finely chopped
  • Parsley, chopped
  • Vegetable oil, as needed

Directions:

Step 1

Slice the mushrooms into however thick or thin you like, then slice the potatoes as well, and finely chop the onion and garlic. Place a pan on a stove over medium-high heat, then heat up some oil, and saute the mushrooms until nice and brown. Remove the mushrooms, then transfer them to a plate, and set it aside. In the same pan, add more oil followed by the potatoes, then give them a good toss, cover with the lid, and let them cook for about 5 minutes.

Step 2

Toss the potatoes again, then cook for another 5 minutes, give them a good mix, and add the chopped onion and butter. Mix them until well combined, then let them cook for 5 more minutes before putting the mushrooms back into the pan, season with salt and pepper to taste, and then mix until well combined. Add the garlic and parsley, then toss to combine, and cook for a few more minutes. Transfer to a serving plate, garnish with more parsley if desired, serve, and enjoy!
