I have tried this three times now and they come out perfect every single time, to say that my family was impressed is not enough because this sticky pork belly is so good that you can just eat it every day. Ingredients:

  • 500 grams or 1 pound of pork belly strips, rind removed
  • 1 tbsp of vegetable oil

Glaze Sauce

  • 3 tbsp of soy sauce
  • 2 tbsp of honey
  • 1 tbsp of brown sugar
  • A thumb of ginger, freshly minced
  • 1 red chili, finely sliced

Stock

  • 1.5 liter of water
  • 1 cube of vegetable or chicken stock
  • 3 to 4 slices of fresh ginger
  • 2 to 3 cloves of garlic
  • 2-3 spring onions, roughly chopped

Directions:

Step 1

Fill a pot with boiling water, then add the vegetable or chicken stock cube, fresh ginger, garlic cloves, and spring onions, and stir them all together until the stock cube has dissolved and everything is well combined. Add the pork belly strip to the pot, then make sure that they are submerged completely, and cover it with the lid. Reduce the heat to the lowest setting, then allow it to simmer for about 45 to 50 minutes, and while waiting, prepare the glaze sauce.

Step 2

In a mixing bowl, add the vegetable or sesame oil, soy sauce, honey, brown sugar, and freshly minced ginger, then give them a good stir until well combined and incorporated, and then set it aside. Once the pork is down simmering, remove them from the stock, then transfer them to a plate lined with paper towels, and pat them dry. Slice each strip into small bite-sized chunks, then place a large frying pan on a stove over medium-high heat, and put the pork chunks upside down so that the fat is at the bottom.

Step 3

Cover the pan with a splatter screen, then allow the pork chunks to fry for about 1 to 2 minutes or until nice and golden brown. After a few minutes, toss the pork chunks around and allow them to cook for 1 to 2 more minutes until all sides are nicely fried, then remove the excess grease, and add the glaze sauce. Stir and toss them every now and then, and allow them to cook until most of the sauce has reduced. Chop some spring onions, then once the pork is done cooking, garnish with the chopped spring onions, and serve. Enjoy!
