Ingredients:

  • 2 tbsp of olive oil
  • 4 cups of trimmed fresh okra, cut into 1½ inch slices
  • 1 tbsp of bacon fat or vegetable oil
  • ½ medium yellow onion, thinly sliced
  • 1 jalapeno, stemmed, seeded, and finely chopped
  • 3 cloves of garlic, minced
  • 1 tbsp of tomato paste
  • 1 (28 ounces) can of whole tomatoes, drained and roughly chopped
  • 1 tsp of Kosher salt
  • ½ tsp of freshly ground black pepper
  • 4 fresh bay leaves
  • 1 tsp of fresh rosemary, chopped
  • ½ tsp of red pepper flakes
  • 2 tbsp of red wine vinegar
  • 1½ cups of chicken stock or vegetable stock

Directions:

Step 1

Place a large skillet pan on a stove over medium-high heat, then add some olive oil, and let it heat up. Add the sliced okra and saute them for about 5 to 8 minutes until they turn slightly brown and most of the slime has disappeared, then set them aside. Place a medium-sized skillet on the stove over medium-high heat, then heat some bacon grease, and add the onion, jalapeno, and garlic. Stir them around and saute for about 3 minutes, then add the tomato paste, tomatoes, salt, pepper, bay leaves, rosemary, red pepper flakes, and vinegar.

Step 2

Cook them for about 10 minutes until the tomatoes start to break down and start turning into a paste. Pour the stock and let it simmer for about 15 minutes or longer over low heat, then stir the fried okra into the tomato sauce, and raise the heat to medium. Bring them to a simmer for another 10 minutes, then taste and adjust the seasonings as needed. Remove the bay leaves and serve at once.
