This is probably one of the best ways to prepare chicken for dinner because it’s so quick and easy to put together. So, if you have some leftover chicken or chicken that you bought a few days ago and don’t know what to do with it, this is definitely a must-try for you. Ingredients:

  • 1 tbsp minced garlic
  • 3 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 tbsp Italian seasoning
  • 1 tsp of celery salt
  • 1 tbsp onion powder
  • ½ tbsp garlic powder
  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • 1 cup onion,  minced
  • 1 cup celery, minced
  • 1 cup green bell pepper,  minced
  • 3 cup chicken broth
  • 3 chicken drumstick
  • 1 bone-in chicken thigh
  • 1 chicken breast

Directions:

Step 1

Clean the chicken and pat them dry with a paper towel, then drizzle them with some olive oil, and rub them well. In a small cup or bowl, add the cajun seasoning, Italian seasoning, celery salt, onion powder, and garlic powder, then stir them together until well combined and uniform, and then sprinkle them all over the oiled chicken. Give them a good massage until all sides of each chicken are well coated with the seasoning, then place a large pan on a stove over medium-high heat, and add the oil.

Step 2

Once the oil is hot enough, add the chicken pieces, then cook them making sure to turn them over every now and then until all sides are nice and golden brown, and then remove them from the pan setting them aside on a plate. In the same pan, add the butter, then let it melt, and add the minced celery, minced green bell pepper, and onion cooking them until soft. Give them a good stir, then add the all-purpose flour, and let it cook for a few minutes before pouring the broth. Stir them well, then add the cooked chicken including its juices, and let them simmer while covered for about 1 hour and 30 minutes over medium-low heat. Serve over steaming rice and enjoy!
