This syrup sponge pudding recipe by Ocado on YouTube looks so good and tastes just as delicious! The moment that I saw it online, I just knew that I had to give it a try, and all the process that I went through was worth every bite.

The sponge pudding just melts in your mouth and the texture of the pudding itself works so well with the syrup and is made even more special with the could double cream topping. I highly recommend that you give it a try to see for yourself.
Step 1
Grease a 1-quart plastic pudding mold with butter, then add the golden syrup to the bottom, and set it aside. In the bowl of a stand mixer, add the butter, sugar, lemon zest, flour, salt, and eggs, then beat them until creamy and thoroughly mixed, and scrape the sides nicely.
Step 2
Add the lemon juice while mixing continuously, then pour the batter into the prepared pudding mold, and cover the mold with the lid or wrap it tightly with plastic wrap.
Step 3
Put it in the microwave, then cook it at 750W for about 6 minutes, and let it stand for an additional 2 minutes. Carefully remove the cover, then invert the pudding to a serving plate, and serve topped with cold double cream. Enjoy!
