A good day for me is when I wake up and there’s already a delicious feast laid out on the table for breakfast because it’s one of the most important meals of the day that nobody should miss. Most of our energy we draw from the food we eat in the morning so you should always pick dishes that are healthy and hearty.

Whenever I can’t have breakfast at home, I always go to my favorite cafe or restaurant and sometimes a fast food place to order something I can eat on the go. One of my favorites is Starbucks’ potato bake and I’m so happy because I can now also have them in the comfort of my home anytime I want with the help of this copycat recipe by Stephanie Manley on YouTube.
Ingredients for Potato Chive Bakes:
- 2 cups of red potatoes, diced
- 1¼ tsp of salt, divided
- 8 large eggs
- 2 tsp of butter
- ½ cup of cottage cheese
- ½ cup of onion powder
- ¼ tsp of distilled vinegar
- ¼ tsp of hot sauce
- ¼ tsp of Dijon mustard
- 2 tbsp of shredded Gruyere cheese
- 2 tbsp of shredded Monterey Jack cheese
- 2 tbsp of shredded white cheddar cheese
- ¼ cup of finely chopped spinach
- ¾ cup of shredded cheddar cheese
- 1 tbsp of chopped chives
How to Make Potato Chive Bakes:
Step 1
Preheat your oven to 325°F, then place a small saucepan on a stove over medium-high heat, add the diced potatoes, and cover them with water. Add 1 teaspoon of salt, then bring the potatoes to a boil, and cook them for about 10 to 12 minutes or until fork tender.
Step 2
Drain off all the water, then set the potatoes aside, and let them cool down. Meanwhile, add the eggs, butter, cottage cheese, onion powder, vinegar, hot sauce, mustard, and salt in a blender, then blend them on a high setting for about 20 seconds until well combined.
Step 3
In a small bowl, combine the Grueyere, Monterey Jack, and white cheddar cheese until uniform, then grease a muffin pan, and divide the cooled potatoes, cheese mixture, and chopped spinach among each cup of the muffin pan.
Step 4
Fill each cup with the egg mixture, then top them with cheddar cheese and chives, and place them in the preheated oven. Allow them to bake for about 25 to 30 minutes or until puffed up ad cooked through, then let them cool down for around 5 minutes, and then remove them from the muffin pan. Serve and enjoy!
