Ingredients:

Leprechaun hat

  • Prepared cake batter
  • Mini ice cream cones
  • Black, green, and yellow melting chocolate/candy
  • Yellow sprinkles
  • Oreos

Lucky charms treat

  • Box of lucky charms
  • White chocolate

Pot of gold cake pops

  • Cake crumbs
  • Buttercream
  • Cake pop sticks
  • Black melting chocolate wafers
  • Yellow melting chocolate wafers
  • Yellow or gold sprinkles/nonpareils
  • Royal icing, red, orange, yellow, green, blue, and purple

Directions:

Place 2 to 3 teaspoons of cake batter into the mini cones, then arrange them onto a cake pan topped with aluminum foil, cut a small plus sign into the foil for the cone to sit. Bake it in a preheated oven at 350°F for 12 to 15 minutes, then let it cool completely. Transfer some melted yellow chocolate mixture into a piping bag, then squeeze and create a small square shape for the buckle. Sprinkle yellow sprinkles on top while still wet, then melt some green chocolate mixture on a heat-proof bowl, dip and coat the Oreos in the mixture, then place it on parchment paper to dry. Dip the bottom of each cone on the green chocolate as well, then turn it upside down and let it harden. Once dry, dip the other portion of the cone into a bowl of melted black chocolate. Place the cones directly on top of the Oreo, then attach the buckle while the chocolate is still soft.

Lucky charms treat

Separate the marshmallows and cereal bits into two mixing bowls. Then spread the cereal pieces on a sheet pan lined with parchment paper flatly. Pour the melted chocolate over the cereal bits, then mix them together until every piece is coated in white chocolate. Press the marshmallows on top firmly but not too hard as to not crush the marshmallows. Allow it to harden for about 20 to 30 minutes or pop it in the fridge for faster hardening. Slice it with a knife and serve in chunks.

Combine the cake crumbs and buttercream into a mixing bowl until it is soft enough to roll into balls. Dip the cake pop stick about 1 inch deep into the melted chocolate, then insert it into the cake ball. Allow it to harden in the freeze for about 5 to 10 minutes. Once hardened, dip the cake pops into the melted black chocolate and cover it entirely. Place it upside down into a piece of parchment paper allowing drips to form at the bottom. Pipe a small arc with red royal icing onto parchment paper, followed by orange, yellow, green, blue, then purple. Allow it to dry and completely harden for several hours up to overnight. Attach the hardened rainbow in the cake pops using melted yellow chocolate. Add some yellow sprinkles for the gold.
