Step 1
Add the flour to a large bowl, then make a well at the center, and crack the egg over it. Whisk the egg, then pour in the beer, and continue to whisk until creamy batter. Add the shallot, garlic, paprika, and cumin, then keep mixing until well combined, and set the batter aside. Drain the chickpeas and rinse under water, then shake off any excess before transferring the chickpeas to another large bowl, and mash them.
Step 2
Transfer the mashed chickpeas to the batter and set it aside, then press down the thawed spinach to remove any excess water, and add them into the batter as well. Season them with salt and pepper to taste, then give them a good mix to combine, and set the mixture aside. Place a large frying pan on a stove over medium heat, then add the olive oil, and heat it for a couple of minutes.
Step 3
Add a spoonful of each of the batter to the hot oil, then make sure to space them evenly, and cook them in batches. Fry the fritters for about 3 minutes per side or until golden brown, then transfer the cooked fritters to a plate lined with paper towels to drain off the excess oil, and prepare the dipping sauce.
Step 4
Add the garlic, saffron, and salt in a mortar, then pound them down until paste-like texture, and add the mayonnaise, lemon juice, and olive oil. Season with more salt and pepper to taste, then whisk them until well combined and serve with the freshly cooked fritters. Enjoy!
