Thanksgiving is just around the corner and just like many others, you may be searching all over the internet for a delicious and different way that you can try to prepare turkey for the holidays. I’m pretty sure, this recipe and technique by Traeger Grills on YouTube is a must-try, the visual of the turkey is absolute perfection, and the taste is equally mouth-watering. Ingredients:

  • 1 orange brine and turkey rub kit
  • 1 cup of bourbon, optional
  • 12-14 pounds of turkey
  • Texas sugar BBQ rub
  • 4 ounces or 8 tbsp of unsalted butter, melted
  • ½ cup of honey
  • ½ cup of Dijon mustard

Directions:

Step 1

Place the turkey on a cutting board with the breast side facing down, then cut along both sides of the backbone, and remove it. Open the turkey up, then remove the giblets and neck, flip it over, and press down hard to crack the breastbone and flatten the turkey. In a large pot, add the brine mix and 4 cups of water, then stir them until combined, and bring it to a boil. Once boiling, remove the pot from the heat, then add about 12 cups of cold water along with the bourbon, and put it inside the refrigerator to cool. After preparing the turkey and once the brine is cold, put the turkey inside the pot, then put it back in the refrigerator to cool for 12 hours up to 24 hours.

Step 2

After 12 to 24 hours, preheat the Traeger grill to 275° with the lid closed for about 15 minutes, then while waiting, remove the turkey from the brine, and pat it dry with paper towels. Add the BBQ rub all over the turkey, then rub or massage it in, and insert the meat thermometer into the turkey breast. Place the turkey on the grill grate, then let it cook for about 3 hours or until it reaches an internal temperature of 160°F, and make sure to baste it with about half of the melted butter every now and then.

Step 3

While waiting for the turkey to cook, prepare the glaze. In a small saucepan, add the honey, mustard, melted butter, and 2 tablespoons of BBQ rub, then bring them to a simmer over medium heat until reduced by about one-third, remove, and set aside. Once done cooking the turkey, brush the glaze all over the turkey, then cook for an additional 10 minutes or until the glaze is set, and let it rest for about 15 minutes. Serve and enjoy!
