Ingredients:

  • 6-10 bell peppers of your choice
  • 1 lb ground beef
  • 1 1/2 cups onion (diced)
  • 1-2 ribs celery (diced)
  • 2 cloves garlic (minced)
  • 1 can of fire-roasted tomatoes (diced)
  • 2 tbsp tomato paste
  • 2 tsp cumin
  • 1 tsp chili powder
  • salt and pepper
  • 1 can of 15 oz black beans
  • 1 can of 7 oz roasted green chiles
  • 1 cup frozen corn (defrosted)
  • 1 1/2 cups long-grain rice
  • 2 cups chicken stock or broth
  • 1/4 cup cilantro (chopped)
  • sliced cheese

Directions:

Step 1:

Slice the bottom and top parts of the bell peppers and move to the side. Using a smaller knife, remove the core and seeds. For the top part: take out the stem of each piece, then dice them. Preheat the oven to 350 degrees F for the bell peppers.

Step 2:

Heat the pan. Make sure to use a deep pan. Once hot, put the ground beef and leave for a few minutes. Put the bell pepper in the oven for 10-15 minutes or until soft. Break the ground beef into pieces and wait until cooked. Then mix the onions, diced bell pepper, celery, and garlic cloves. Next, add the diced fire-roasted tomatoes, tomato paste, chili powder, and cumin into the ground beef mixture. Blend well and cook for 5 minutes. Then sprinkle two (2) pinches of salt and pepper. After that, toss the beans, corn, and chiles into the pan and combine all the ingredients. Put the cilantro, rice, and chicken broth into the beef mixture. Stir, then cover the pan. Cook for 20 minutes. Mix, then turn the heat off.

Step 3:

Take the bell peppers and stuff the bell peppers with the mixture. Place the sliced cheese on top of the stuffed bell peppers. Put back in the oven for 10 minutes. After 10 minutes, the dish is finish! Serve them nicely on a plate.
