Ingredients:

  • Olive oil, as needed
  • 1 cup of bell pepper, diced
  • 1 cup of canned black beans, rinsed and drained
  • ½ cup of corn, canned, frozen, or fresh
  • ½ cup of onion, diced
  • 2 cloves of garlic, minced or crushed
  • 1 tsp of cumin
  • 1 tsp of chili powder
  • Salt, to taste
  • Pepper, to taste
  • ¼ cup of freshly chopped cilantro
  • 4 medium flour tortillas
  • 2 cups of shredded cheese

Sour Cream Dipping Sauce

  • ½ cup of sour cream
  • ¼ cup of mayonnaise
  • ¼ cup of cilantro minced
  • Juice of ½ lime
  • 1 tsp of olive oil
  • Salt, to taste
  • Pepper, to taste

Directions:

Step 1

Place a pan on a stove over medium-high heat, then add a tablespoon of oil, and let it heat up. Add the bell peppers, black beans, corn, corn, onion, and garlic, then season them with cumin, salt, and pepper, and give them a good toss to combine. Cook them for about 3 to 4 minutes or until the bell peppers and onions are softened, then turn off the heat before adding in the cilantro, give them a good stir, and turn off the heat.

Step 2

Set the mixture aside, then place a clean skillet on the stove over medium heat, then spread some oil, and place the flour tortilla. Place some cheese along half of the tortilla, then top it with some cooked veggies, and add another layer of cheese on top. Fold over the tortilla, let it cook for about 3 minutes, then once the bottom is nice and brown, flip it over, and cook the other side as well for another 3 minutes or until golden brown.

Step 3

Remove the quesadilla from the pan, then transfer it to a serving plate, and cook the rest of the ingredients. In a medium-sized mixing bowl, add the sour cream, mayonnaise, minced cilantro, lime juice, olive oil, salt, and pepper, then whisk them all together until combined and incorporated. Serve the quesadillas with the sour cream sauce and enjoy!
