Ingredients:

  • 1 box of yellow cake mix
  • 4 cups of milk, divided
  • ½ cup of vegetable oil
  • 3 eggs
  • 2 teaspoons of vanilla
  • 1 (20 ounces) can of crushed pineapple
  • 1 cup of white sugar
  • 1 (5.1 ounces) box of instant vanilla pudding
  • 8 ounces of Cool Whip, thawed
  • ½ cup of chopped pecans
  • ½ cup of sweetened shredded coconut

Directions:

Step 1

First, preheat your oven to 350 degrees Fahrenheit, then grease a 9*13 inches baking dish with a non-stick cooking spray or butter. In a large mixing bowl, pour in the cake mix, a cup of milk, vegetable oil, eggs, and vanilla, then give them a good mix until they are well combined. Then, pour this mixture into the prepared and greases baking dish. Pop it in the preheated oven and let it bake for about 30 to 45 minutes or until the center is set. While the cake is baking in the oven, place a small saucepan on a stove over medium-high heat, then combine the crushed pineapple and sugar until uniform.

Let it cook until the sugar is dissolved while stirring constantly. Once the cake is done baking, remove it from the oven, then start poking the top of the cake a few times carefully with a knife. Pour in the pineapple mixture over the top of the warm cake, then spread it around evenly. Let the cake, as well as the pineapply mixture, cool completely. Combine three cups of cold milk with the vanilla pudding mix into a medium-sized mixing bowl, then whisk them together until they become thick. Spread this pudding mixture over the pineapple mixture evenly. Cover the top with a layer of whipped cream, then sprinkle some shredded coconut, and top it with pecans. Pop it in the refrigerator and let it chill until it is set or until ready to serve.
