Ingredients for Southern Lemon Lush Pie:
- 9″ Graham cracker pie crust
- ½ cup of chopped pecans, toasted
Cream Layer
- 4 ounces of cream cheese, at room temperature
- ½ cup of powdered sugar
- 1 cup of Cool Whip
- Lemon zest
Lemon Jell-O Layer
- 1 (3.5oz) box of lemon instant pudding mix
- 1 cup of milk
- Juice of ½ lemon, medium-sized
How to Make Southern Lemon Lush Pie:
Step 1
Spread the toasted chopped pecans all over the crust reserving some for topping later, and set the crust aside. In a bowl, beat the cream cheese and powdered sugar until smooth and creamy, then add 1 cup of Cool Whip, and fold until incorporated. Transfer the cream mixture over the crust, then spread it evenly, and sprinkle some lemon zest over the top.
Step 2
In a separate bowl, add the lemon juice and set it aside, then in another bowl, add the Jell-O powder and milk, and whisk them until fully combined and dissolved. Add the Jell-O mixture to the bowl of lemon juice, then continue to whisk until incorporated, and let it stand for about 5 minutes.
Step 3
After a few minutes, transfer the lemon Jell-O mixture over the cream layer, then spread it evenly, and pipe the remaining lemon Jell-O mixture and Cool Whip on top decorating it however you want. Sprinkle the reserved toasted chopped pecan and lemon zest on top, then chill or serve immediately, and enjoy!
