You’ll never get enough of this 1-egg souffle pancake recipe from Thy Than on Youtube. These pancakes are so fluffy, soft, and jiggly; they’ll definitely be your go-to recipe from now on. Ingredients:

  •  1 large egg
  • 2 tbsp plain flour (or all-purpose flour)
  • 1 tbsp milk
  • 1 & 1/2 tbsp sugar
  • 1/2 tsp vanilla extract
  • 3 to 4 drops of lemon juice (or vinegar, optional)

Directions:

Step 1

Separate the egg yolk and white in two different bowls. Next, add 2 tbsp plain flour to the egg yolk followed by 1 tbsp milk. Mix until combined, then add 1/2 tsp vanilla extract and continue mixing. Moving on to the egg whites, add 3 to 4 drops of lemon or vinegar to stabilize. Whisk until foamy, then add 1 & 1/2 tbsp sugar. Continue whisking at medium speed for 3 minutes and stop when firm peaks. Add 1/3 of the meringue to the egg yolk mixture and mix in a circular motion to combine, then add the rest of the meringue. Fold it gently using a spatula.

Step 2

Preheat a pan for about a minute and grease with some oil, then using an ice cream scoop, scoop out some batter and gently add it to the pan. (You can use a spoon if you don’t have an ice cream scooper.) Scoop 2/3 of the batter into two pancakes. After this, add 2 tsp room temperature water to the pan, cover it with a lid, and cook for 2 minutes. After 2 minutes, scoop the rest of the batter into each pancake, then add 1 more teaspoon of water. Cover and reduce the heat to medium-low and cook for 5 minutes. After 5 minutes, flip the pancakes. Cover again and cook for another 5 minutes. After this, turn off the heat and let them sit in the pan for a minute, then serve.
