Ingredients:

Cheesecake Filling

  • 9 ounces of chilled cream cheese
  • 3 tbsp of sugar
  • 1 small egg, at room temperature
  • 1 tsp of vanilla paste or vanilla extract

Chocolate Cake

  • 1/3 cup of unsalted butter, at room temperature
  • 1/3 cup of vegetable flavorless oil
  • 1 cup of sugar
  • 3 eggs, at room temperature
  • 2 cups+2 tbsp of all-purpose flour
  • 2/3 cup of unsweetened cocoa powder
  • 1½ tsp of baking powder
  • 1 cup+1 tbsp of milk lukewarm

White Chocolate Coconut Frosting

  • 3 ounces of white chocolate, chopped
  • 2 tbsp of whipping cream
  • 7 ounces of chilled cream cheese
  • 1 cup of chilled whipping cream
  • 2 tbsp of powdered sugar
  • Shredded unsweetened coconut

Directions:

Step 1

In a medium-sized bowl, add the cream cheese, sugar, vanilla, and egg, then mix them all together until smooth and well combined, and set it aside. In a separate mixing bowl, mix together the butter, oil, and sugar until creamy, then add the eggs one at a time, and continue to mix them until incorporated. Sift over the flour, cocoa, and baking powder, then continue mixing them over low speed, and gradually pour the milk while mixing continuously but make sure to not overmix.

Step 2

Pour the cake batter into a large oven-safe bowl greased with butter and dusted with sweetened cocoa powder, then spread the cheesecake filling on top evenly, and proceed to bake it in a preheated oven at 180°C or 350°F for about 75 minutes or until a toothpick inserted at the center comes out clean. After about 40 minutes, cover the top of the cake with aluminum foil to prevent it from burning, then put it back in the oven to finish the cooking time, and let it cool down completely.

Step 3

While waiting for the cake to cool, melt together the chopped white chocolate and whipping cream, then set it aside, and let it cool down to room temperature. In another large mixing bowl, beat together the cream cheese, chilled whipping cream, and powdered sugar until creamy, then add the melted white chocolate mixture, and continue mixing until well combined. Now, unmold the cake, then trim off the top flatly, and unmold it upside down on a serving plate. Cover the cake with the prepared frosting, then sprinkle it all over with shredded coconut, and you’re done!
