Step 1
Preheat your oven to 425°F, then line a large baking sheet with parchment paper, and prepare an ice bath in a large bowl. Fill a large pot with water, then add some salt, and bring it to a boil.
Step 2
Add the Brussels sprouts, then let them cook for about 10 minutes or until bright green and very tender, and immediately transfer them to the ice bath.
Step 3
Once they are completely cool, drain off all the water, then transfer them to the prepared baking sheet, drizzle some olive oil, garlic, and thyme, and toss them until well coated.
Step 4
Smash the Brussels sprouts by pressing them down with a mason jar, then season them with salt and pepper, and top them with mozzarella and parmesan cheese.
Step 5
Place them in the preheated oven, then let them bake for about 20 minutes or until the Brussels sprouts are crispy and the cheese has melted. Garnish them with parsley, then serve warm, and enjoy!
