Ingredients:

  • 1 pound of red kidney beans
  • 2½ pounds of smoked turkey wings
  • 12 ounces of smoked sausage, cut into ½-inch round pieces
  • 1 small onion, chopped
  • 1 small bell pepper, chopped
  • 2 sticks of celery, chopped
  • 4 cloves of garlic, minced
  • 32 fluid ounces of chicken broth
  • 2 dried bay leaves
  • 3 tbsp of butter
  • 2 tbsp of Louisiana hot sauce, or to taste
  • 1 tsp of Cajun seasoning, or to taste

Directions:

Step 1

Place the beans in a large bowl, then fill it with water until completely covered, and let them soak for at least 12 hours up to overnight. The next morning, drain the beans, then rinse them well, and add them to the pot of the slow cooker. Now, add the smoked turkey wings, chopped veggies, chicken broth, sausages, and bay leaves, then cover the pot with the lid, and allow them to cook on a high setting for 4 hours.

Step 2

At the 4-hour mark, stir everything together carefully, then add the salt, butter, hot sauce, and cajun seasoning, give them a good mix, and adjust the taste to your preference. Remove the bones, then cover the pot with the lid again, and let them cook for another hour. While waiting for them to cook, you can prepare a cornbread as shown in the video tutorial. Once done cooking, garnish the turkey with freshly chopped parsley, then serve with cornbread and/or rice, and enjoy!
