This warm, loaded, and super delicious stew recipe by Pressure Luck Cooking will surely make any mealtime special! You can make this yummy stew using only ground beef and some veggies that are easy to find in the nearest grocery store. Ingredients:

  • 3 tbsp extra-virgin olive oil
  • 2 large or 3 medium carrots, peeled and sliced into ¼-inch thick pieces
  • 1 red onion, diced
  • 1½ pounds ground beef
  • 2 tbsp Worcestershire sauce
  • 2 tsp liquid smoke
  • 2½ cups beef broth
  • 2 (14.5-ounce) cans of diced tomatoes, including the juices
  • ¼ cup ketchup
  • 2 tbsp light or dark brown sugar
  • 1 (6-ounce) can of tomato paste
  • 2 cups Cheddar cheese, shredded
  • 1 cup diced dill pickles, with ¼ cup of their juices
  • 1 tbsp creole seasoning or salt

Directions:

Step 1

First off, add the olive oil to the pot, then hit the saute button, and put it on a high setting. Let the oil heat up for about 3 minutes before adding the carrots and onions, then saute them for 3 minutes before adding the ground beef, break them apart, and cook for 3 more minutes. Add the Worcestershire sauce and liquid smoke, then give them a good stir making to scrape the browned bits at the bottom of the pot and bring it to a simmer for 30 seconds.

Step 2

Next, add the diced tomatoes, ketchup, and brown sugar, then stir them together before closing the valve and switching the valve to seal, and press the cancel button before pressing the pressure cook letting the stew cook for about 10 minutes. Once done cooking, quick release the pot, then add the tomato paste, cheese, diced pickles, and creole seasoning or salt, and stir them all together until combined and incorporated. Scoop the soup into bowls, then garnish it with more cheese, red onion, and pickles, serve, and enjoy!
