This recipe by Food Wishes on YouTube is hands down one of the best I have ever tried and is also my go-to dish for dinner or special occasions. This pot roast is so tender that it melts in your mouth, and it’s so delicious that you just can’t stop eating. You should definitely give this a try, you won’t regret it.

Step 1
Season the meat with salt and pepper on both sides, then coat it with some flour, pat it down, and shake off the excess. Place a large skillet pan on a stove over medium-high heat, then add the oil, and heat it before placing the seasoned beef. Sear it well on both sides until nice and brown, then remove it to a plate, and set it aside.
Step 2
In the same pan, add the mushrooms and butter, and saute them over medium heat for about 3 to 4 minutes or until nice and brown. Add the onions, then toss and saute until softened before adding the garlic, and cook them for another minute.

Add some flour, then stir, add the tomato paste, and pour in the beef broth. Give them a good stir, then bring them to a simmer until thickened, and turn off the heat. In the pot of a slow cooker, add the veggies at the bottom, then place the cooked beef on top, and top them with sprigs of rosemary and thyme.
Step 4
Pour in the sauce spreading the onions and mushroom evenly on top, then cover the pot with the lid, and let them cook on a high setting for about 5 to 6 hours or on a low setting for about 8 to 10 hours. Skim any fat that comes to the top, then once the meat is fork tender, discard the bones, and serve the pot roast. Enjoy!
