In a bowl, put 2 tsp of paprika, 2 tsp of salt, 1 tsp of onion powder, 1 tsp of garlic powder, 1 tsp of thyme, and 1/2 tsp of black pepper. Mix them well to combine. Next, prepare the crock pot or slow cooker, and place the rinsed whole chicken inside. Get a piece of paper towel and pat down the chicken for it to become nice and dry. After this, drizzle some olive oil, then spread it all over the chicken. Add the spice mixture and rub it in nicely.

Cut a large onion into quarters and add it to the crock pot, placing it around the chicken. (You can cook it on high for four hours or low for eight hours, but the latter would be so much better as the chicken will be more tender and the flavors will be infused better.) Put the lid on and set it on low for eight hours. After eight hours, check the temperature of the chicken with a thermometer, you should have it above 165 degrees F. You can serve this with some vegetables or a salad, it’s completely up to your liking.
