Sweet Chili Glaze
Step 1
Preheat your oven to 375°F, then line a baking sheet with aluminum foil, and set it aside. Place a skillet on a stove over medium heat, then melt the butter or heat the vegetable oil, and saute the diced red bell pepper, green bell pepper, and onions for about 5 to 7 minutes or until softened and translucent.
Step 2
Throw in and saute the minced garlic for the last 30 seconds, then cook until fragrant, and remove the pan from the heat setting it aside to cool down. In a mixing bowl, add the crushed Ritz crackers and milk, then stir until combined, and let it soak for about 5 minutes until thickened. In a separate bowl, add the ketchup, sweet chili sauce, and brown sugar, then stir until smooth, and set it aside for the glaze later.
Step 3
In a large bowl, add the ground beef, soaked Ritz cracker mixture, sauteed vegetables, eggs, Worcestershire sauce, Dijon mustard, onion powder, garlic powder, thyme, basil, parsley, paprika, salt, and black pepper, then mix everything with your hands until just combined making sure not to overmix, and then shape it into a loaf.
Step 4
Transfer it to the prepared baking sheet, then spread half of the glaze evenly on top, and wrap it loosely with foil. Place it in the oven, then let it bake for about 30 minutes, and after half an hour, unwrap and brush the remaining glaze on top of the meatloaf. Put it back in the oven uncovered to bake for another 30 minutes or until the internal temperature has reached 165°F, then let it rest for about 10 minutes, and serve. Enjoy!
