Step 1
Place a cast-iron skillet pan on a stove over medium-high heat, then add some olive oil along with a tablespoon of butter, and melt it before adding the sliced sausage. Season them with salt and pepper to taste, then give them a good stir, and cook until nicely seared.
Step 2
Remove the sausage and transfer them to a bowl, in the same pan, add the onions, then season them with salt and pepper, and cook them for about 2 minutes until caramelized. Stir and cook for another minute, then remove the onions, and transfer them to the same bowl as the sausage.
Step 3
Add the remaining butter to the pan and let it melt, then add the diced potatoes, and season them with salt and pepper to taste. Add the rest of the seasonings and herbs, then give them a good stir to mix well, and cook for a couple of minutes until the potatoes are fork-tender.
Step 4
Taste and adjust the seasonings as needed, then add the cooked onions and sausage back into the pan and toss everything until combined. Turn off the heat, then serve immediately, or let it cool down a bit before serving, and enjoy!
